Jasmine Rice with Toasted Pine Nuts and Parsley Recipe


I love the nutty aroma of jasmine rice.  I combined this dish with pine nuts for a little crunch and parsley for a little color.

Inspired by The Hunger Games Trilogy

Prep Time:  5 minutes     Cook Time:  20 minutes     Servings:  8

Nutty Jasmine Rice

 

Ingredients

  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1/3 cup toasted pine nuts
  • 1/3 cup fresh chopped parsley
  • 1 tablespoon butter
  • Salt to taste

Instructions

  1. Combine jasmine rice and chicken broth in a medium saucepan. Bring to a soft boil;  reduce heat to low and simmer covered for 20 minutes or until moisture is absorbed.  Remove from heat and let stand covered for 10 minutes.
  2. Add toasted pine nuts, chopped parsley, butter and gently fluff rice.  Salt to taste.
