Jasmine Rice with Toasted Pine Nuts and Parsley Recipe
I love the nutty aroma of jasmine rice. I combined this dish with pine nuts for a little crunch and parsley for a little color.
Inspired by The Hunger Games Trilogy
Prep Time: 5 minutes Cook Time: 20 minutes Servings: 8

Ingredients
- 2 cups jasmine rice
- 4 cups chicken broth
- 1/3 cup toasted pine nuts
- 1/3 cup fresh chopped parsley
- 1 tablespoon butter
- Salt to taste
Instructions
- Combine jasmine rice and chicken broth in a medium saucepan.
Bring to a soft boil; reduce heat to low and simmer covered for 20 minutes or until moisture is absorbed. Remove from heat and let stand covered for 10 minutes.
- Add toasted pine nuts, chopped parsley, butter and gently fluff rice. Salt to taste.
