Dodo (Fried Plantains) Recipe


Nigerians eat plantains for a starchy side dish.  Their skin should be yellowish green for this dish – if skins are too black (very ripe), plantains will be too sweet and not starchy enough.

Prep Time:  5 minutes     Fry Time:  5 minutes     Serves:  6-8

Nigerian Dodo

Ingredients

  • 4 plantains, peeled and sliced
  • Canola oil for frying
  • Salt to taste

Instructions

  1. Heat oil in frying pan (oil should be 1/2 inch deep)
  2. Place peeled and sliced plantains in frying pan.  Fry for 2 minutes on each side or until golden brown.
  3. Drain on paper towels.
  4. Season with salt.
  5. Serve warm.
