Dodo (Fried Plantains) Recipe
Nigerians eat plantains for a starchy side dish. Their skin should be yellowish green for this dish – if skins are too black (very ripe), plantains will be too sweet and not starchy enough.

Prep Time: 5 minutes Fry Time: 5 minutes Serves: 6-8

Ingredients
- 4 plantains, peeled and sliced
- Canola oil for frying
- Salt to taste
Instructions
- Heat oil in frying pan (oil should be 1/2 inch deep)
- Place peeled and sliced plantains in frying pan. Fry for 2 minutes on each side or until golden brown.
- Drain on paper towels.
- Season with salt.
- Serve warm.
