Tomato Garlic Bread with Chevre and Mint Recipe

The Spanish enjoy their bread rubbed with fresh tomato, olive oil, garlic and salt. Add a touch of Chevre and mint and I guarantee there won’t be a single bit of this Tomato Garlic Bread with Chevre and Mint left!


Prep: 10 minutes | Cook: 5 minutes | Serves: 6-8



  • French loaf or Ciabatta loaf
  • 2 garlic cloves, peeled and halved
  • 2 very ripe tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • sea salt
  • coarse ground pepper
  • Chevre (4 ounce) cheese
  • mint leaves


  1. Preheat oven to 400 degrees F.
  2. Split the loaf lengthwise and open.  Then cut each length in half to make four pieces of bread.
  3. Gently rub a garlic half on each piece of bread.  Rub a tomato half on each piece of bread, squeezing the tomato as you rub so the juices are spread all over the bread.
  4. Spread olive oil heavily over each bread piece.  Season with sea salt and black pepper.  Dollop Chevre over bread and toast lightly in oven for about 5-7 minutes.  Serve with fresh mint.
