Southern Beaten Biscuits with Whipped Honey Butter Recipe



Back before baking powder was a common kitchen staple, these biscuits used to be beaten with a mallet or rolling pin to get the dough to blister. The little blister air pockets helped the dough to rise. In this recipe, we’ll cheat a bit and add some baking powder.

Ingredients

Biscuits

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup butter, chilled and cut into tablespoon sized pats
  • 3/4 cup heavy cream

Whipped Honey Butter

  • 1 cup butter, room temperature
  • 1/8 cup honey
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla

Instructions

  1. Preheat oven to 450 degrees F.
  2. Mix together flour, baking powder, sugar, and salt.
  3. Add chilled butter pats to dry ingredients and with hands or stand mixer with pastry hook attachment work butter into the flour mixture until  pea-sized crumbles form.
  4. Slowly incorporate the heavy cream.  Dough will be sticky.
  5. On a clean floured surface or floured Silpat, knead dough for one minutes, adding more flour a bit at a time until dough is no longer sticky.  Form dough into a ball, then beat the dough flat with a mallet or rolling pin. Turn the dough a quarter turn, fold it in half and whack it flat again.  Add flour if dough begins to stick.  Continue turning, folding and beating dough flat for at least 200 good whacks or 5-10 minutes until dough begins to blister.
  6. Roll dough out to a 1/4-inch thickness, then fold dough in half.
  7. With a round biscuit cutter, cut out biscuits from the folded dough (each biscuit will have a top and a bottom.)
  8. Place very close together on a greased baking sheet and bake for 15 minutes or until golden brown.
  9. While biscuits are cooking, prepared whipped honey butter by placing all ingredients in a medium sized bowl and whip together.  Place whipped honey butter in serving bowl to be spread on biscuits as desired.
