Johnnycakes Recipe



Johnnycakes, a staple of the Native American diet, are made from cornmeal that is mixed with salt and hot water or milk. Another name for them is journey cakes because they could be carried in saddlebags on long trips.

Prep: 8 minutes | Cook: 8 minutes | Yield: 24 cakes

Ingredients

  • 1 cup flour
  • 2 1/2 cups stone ground cornmeal
  • 2 teaspoons salt
  • 6 tablespoons unsalted butter, softened
  • 1 3/4 cups hot milk, plus more if necessary (I microwaved it for 30 seconds at a time)

Instructions

  1. Combine the flour, cornmeal and salt. Stir in the butter and milk, adding more milk if necessary to form a batter that is thick, but still comes easily off the spoon.
  2. Drop by spoonfuls onto a greased griddle or skillet over medium heat and flatten slightly. Cook until golden brown on both sides.
