Italian Garlic and Spinach Saute Recipe

The pine nuts add a tasty crunch to this Spinaci con Aglio Italian recipe.  Perfect for your Eat, Pray, Love book club party menu.

Prep time:  15 minutes | Cook time:  10 minutes | Serves: 4 – 6

Spinach with Garlic


  • 2 pounds spinach, thoroughly washed
  • 3 tablespoons olive oil
  • 1/4 cup pine nuts
  • 3 cloves Garlic, slivered
  • Salt and pepper — to taste


  1. Wash spinach thoroughly with water. Pat dry.
  2. Heat  olive oil in a large skillet over medium-high heat. Add  pine nuts and sauté until barely lightly  brown.  Stir in the garlic and continue to sauteing until garlic  lightly brown.
  3. Working quickly, add a handful of spinach at a time, stirring after each addition.  Keep stirring until all spinach is wilted.
  4. Remove from heat and season to taste.
