Danish Red Cabbage Recipe

The beautifully colored red cabbage dish brightens up a meal. The sweet and tangy tastes are complimentary and the Granny Smith apples add a bit of crunch.

Preparation:  10 minutes | Cook:  2 1/2 hours | Serves:  8

Danish Red Cabbage


  • 1 small head of red cabbage
  • 1/4 cup (1/2 stick) of butter
  • 2 tablespoons sugar
  • 1/3 cup white vinegar
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon coarse ground pepper
  • 1/2 cup red currant jelly
  • 2 Granny Smith apples, peeled, cored, and diced


  1. Remove rough outer leaves on cabbage.  Wash & pat dry cabbage.  Shred cabbage finely.
  2. Melt butter in large stock pot.  Stir in sugar then add shredded cabbage.  Cook for 3 minutes.  Add vinegar, water, salt and pepper.  Cover an simmer for 2 hours.
  3. Stir in jelly and apples.  Taste and add salt and pepper, to taste.  Simmer for 15 minutes, stirring occasionally.  Serve warm.
