Bier Brotchen (Beer Muffins) Recipe

An interestingly dense and flavorful muffin.

Prep time:  15 minutes | Cook time:  25 minutes | Serves: 8-12

  • 3 cups unbleached flour
  • 1 tablespoon sugar
  • kosher salt
  • 1 tablespoon baking powder
  • 1 bunch green onions, chopped
  • 1 cup grated cheddar cheese
  • 12 ounces of a good German beer (I actually use Shiner Bock. It’s a good German-style beer brewed in Texas!)
  • 1 egg, beaten


  1. Preheat oven to 375 degrees.
  2. Grease and flour a 12-cup muffin pan. Mix together flour, sugar, a good pinch of kosher salt, baking powder, chopped green onions and cheese in a large bowl of mixer.    Gradually stir in beer and mix until just combined. Spoon the thick batter into the prepared muffin pan and brush tops with beaten egg. Sprinkle a bit more kosher salt on top of each muffin.
  3. Bake until golden and toothpick inserted in center of muffin comes out clean, about 20-25 minutes.
  4. Allow muffins to cool for 10 minutes before removing from pan.
