Bacon Buttermilk Muffins Recipe

These muffins are so flavorful! Enjoy them with your favorite stew, soup, or bowl of beans.

Adapted from I Love Bacon Muffins in Cider Beans, Wild Greens, and Dandelion Jelly: Recipes from Southern Appalachia by Joan E. Aller

Prep: 15 minutes | Cook: 20 minutes | Yield: 1 dozen muffins

Bacon Muffins


  • 6 slices of bacon
  • 1/4 cup bacon grease (add vegetable oil to make 1/4 cup, if needed)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse black pepper
  • 1 tablespoon sugar
  • 1 cup buttermilk
  • 2 large eggs, beaten


  1. Preheat oven to 400°F. Lightly grease a 12-cup muffin pan.
  2. Fry bacon until crisp. Crumble bacon and set aside. Reserve the bacon grease.
  3. Sift together the flour, baking powder, salt, pepper, and sugar. Mix in the reserved 1/4 cup bacon grease (vegetable added to make 1/4 cup, if needed), buttermilk, and eggs. Fold in crumbled bacon.
  4. Spoon batter into the prepared muffin pan and bake 15-20 minutes until golden brown.
