Alu Palak (Spinach and Potatoes) Recipe

Alu (or aloo) palak is an Indian potato dish made with spinach and simmered in a flavorful combination of spices.

Prep: 40 minutes| Cook: 30 minutes | Servings: 8

Spinach, potatoes, indian recipe


  • 1/4 cup oil
  • 2 onions, chopped
  • 3 garlic cloves
  • 2 inches fresh ginger
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 4 potatoes, peeled and cut into 3/4 inch cube
  • 3 tomatoes, chopped
  • 4 bunches palak (spinach), chopped
  • Salt to taste


    1. In a large skillet, heat the oil over medium heat and cook the onions until translucent.
    2. Combine the garlic and ginger to form a paste. Add to the skillet along with the cumin, coriander, red chili powder and turmeric. Mix well.
    3. Add potatoes and tomatoes and cook for about 10 minutes.
    4. Add palak and salt to taste. Cover and cook over medium heat for 20 minutes, stirring occasionally.
