Anjero (Traditional Somali Pancake) Recipe

I am not sure of the exact name of the traditional somali pancake as I have seen it spelled many ways: anjara, anjero and lahooh. In Infidel, it was called angello and rolled with butter and sugar. The original recipe makes 4 pancakes but I made them thinner by using less batter per pancake so I could roll them easier.

Have you ever wondered about hasty pudding? Of course, most of us have heard of Harvard’s Hasty Pudding Club, but what is hasty pudding and what does is have to do with Harvard? The answer to the first question is that hasty pudding is actually derived from traditional English recipes. Early colonials learned to adapt their food preparation to available ingredients, one of which was the Native American’s cornmeal. Hasty pudding is one of those such early American foods.

Creamy Kanafeh Dessert Recipe

Kanafeh is a creamy, rich Middle Eastern dessert made with shredded phyllo and two cheeses. A sweet syrup of orange blossom water, lemon juice and a pinch of saffron is poured over the warm kanafeh, followed by a sprinkling of pistachios. Take my word, this is one special dessert!

Chocolate Palacsinta Recipe

A palacsinta is similar to a crepe and is delicious with a variety of fillings, commonly apricot jam and walnuts. A well known Hungarian version is the Gundel pancake a crepe with a filling made from rum, raisin, walnuts, and lemon zest, served with a chocolate sauce. You can set up a palacsinta bar so each person can add their favorite fillings and toppings.

Afghan Semolina Halwa Recipe

Halwa, meaning “sweet”, is typically made with butter, flour and sugar. It is made with vegetable oil, semolina flour, sugar and cardamom. The halwa has a texture similar to polenta and can be served on a plate or in a bowl or can be formed into bars. Be sure you use a very large pot because there is a lot of sizzling when the flour is added and splattering when the water is added.

Cherry Batter Pudding Recipe

Cherry Batter Pudding is a simple, yet sophisticated dessert. Kirsch (cherry brandy) drizzled over the dessert upon removal from the oven sends it over the top, but the kirsch can be omitted for a kid-friendly version. Be sure to use only fresh cherries.

Chocolate Croissant Bread Pudding with Bourbon Sauce Recipe

I don’t think I have ever tasted bread pudding before and I love it. I don’t know if this is a testament to bread pudding or this specific recipe. Tiffany adapted this recipe by substituting dried cherries for the raisins for our A Tree Grows in Brooklyn book club party.
