Spotted Dick Recipe



This is a recipe name that certainly catches one’s attention. I don’t dare speculate on the origins, but this English steamed pudding served with warm custard is a real treat!

Prep Time:  20 minutes | Cook Time:  2 hours | Serves:  8

Spotted Dick

Ingredients

  • 1/2 cup butter, room temperature
  • 1 1/4 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 2 1/4 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 tablespoons whole milk
  • 1 cup golden raisins, dark raisins, or currents (or combination of all three)

Custard Sauce:

  • 2 tablespoons of Bird’s Custard Powder*
  • 2 tablespoons sugar
  • 2 tablespoons milk
  • 2 1/3 cups of milk

Instructions

  1. Grease and flour ceramic pudding basin (see below for pudding basin image.)  Cut a circle from parchment paper a bit larger than diameter of pudding basin.  Set aside.
  2. In heavy-duty shallow roasting pan with flat rack* or ridged bottom, pour in 1-inch of water and, on stove-top, heat over medium-high heat.
  3. In a large bowl of mixer*, cream butter and sugar until light and fluffy.  In small bowl, beat eggs and vanilla together with fork then add to butter/sugar mixture.  Beat well and scrape sides of mixing bowl.
  4. Add flour, baking powder and salt.  Mix until just combined.  Add milk and beat until smooth.  Add raisins and beat until just combined.
  5. Place batter in prepared pudding basin.  Place parchment circle over top of batter, gently pressing over batter.  When water in roasting pan boils, place pudding basin in pot.  Carefully cover roasting pan with 2 large pieces of heavy duty foil, large enough to cover and seal roasting pan and to form a bit of tent over pudding basin.  (We want to steam-cook the pudding.)  Reduce heat to medium and steam for about 2 hours until spotted dick is set.  More water may need to be added after first hour of steaming has passed.   Be very careful when checking water level.  The steam will be extremely hot.
  6. When pudding has set, carefully remove from roasting pan and allow to cool in pudding basin for 5 minutes.  Run a knife around inside rim of bowl and invert spotted dick onto plate.  Serve warm with custard.
  7. During last hour of cooking, prepare custard sauce.  In large bowl, whisk together custard powder, sugar and 2 tablespoons of milk to form paste.  Set aside.  In medium saucepan, heat 2 1/3 cup of milk to simmering.  Gradually, whisk simmered milk into custard paste.  Return entire mixture to saucepan and cook, whisking constantly for 1 to 2 minutes until sauce thickens.  Remove from heat and serve warm custard sauce over warm spotted dick.
