Rosemary’s Sweet Raspberry Sorbet Snow Cone Recipe

A snow cone is a must for any circus themed party so I decided to make a “Big Girl” snow cone using raspberry sorbet. This sorbet recipe is not limited to raspberries, any frozen fruit can be used.

berry ice cream recipes

  • 2 (20 ounce) package frozen raspberries
  • 8 ounce Greek plain yogurt*
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • 3 tablespoons fresh lime juice
  • 12 snow cone cups
  • 12 white plastic spoons

  1. Place frozen raspberries in a food processor.  Blend for a total of 3 minutes, turning processor off and scraping sides with spatula after each minute.   Raspberries should be consistency of shaved ice.
  2. Add yogurt, heavy cream, powdered sugar, and lime juice.  Process for 3 more minutes, again turning processor off and scraping sides with spatula after each minute.
  3. Scoop into bowl and cover by pressing plastic wrap down onto sorbet to give it an air tight seal.   Place in freezer for at least 4 hours.
  4. Let sorbet sit at room temperature for 10 minutes before serving.  Scoop sorbet into a snow cone cup using an ice cream scoop, add a spoon and serve.

*  Greek yogurt is thicker and richer than regular yogurt, you can substitute one for the other, if preferred.
