Patriotic Berry Cake Recipe

An elegant patriotic dessert made in a tart pan and topped with vanilla glaze, strawberries, blueberries and mint.

Prep:  35 minutes | Cook:  12-15 minutes | Serves: 6

Cake, strawberries, blueberries,


  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup butter, room temperature
  • 1 1/2 cups sugar
  • 3 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • Fresh mint for garnish
  • 2 pints strawberries
  • 2 pints blueberries

Vanilla glaze

  • 1/2 cup butter
  • 3 cups powdered sugar, sifted
  • 2 teaspoons vanilla
  • 2-4 tablespoons milk


  1. Preheat the oven to 375 degrees.  Grease the bottom of a tart pan with shortening and flour.  Spray the sides with cooking spray.
  2. Combine flour, baking powder and salt in a medium bowl.
  3. In a large bowl, cream the butter and sugar with an electric mixer until fluffy, about 8 minutes.
  4. Add the eggs one at a time, beating thoroughly after each addition.
  5. Alternately add the flour and milk, starting and ending with flour.  Mix in the vanilla.
  6. Pour into the prepared tart pan and bake for 12-15 minutes until an inserted toothpick comes out clean.
  7. Remove the cake from the oven and let cool.
  8. Meanwhile, prepare the glaze by melting the butter in a saucepan.  Whisk in the powdered sugar and vanilla.  Add milk 1 tablespoon at a time until the desired consistency.
  9. To remove the cake from the tart pan, push on the removable bottom of the pan.  Place it on the serving plate.  Pour the icing over the individual cakes until it starts to run down the sides of the cake.
  10. Arrange the blueberries and strawberries over the top of the cake and garnish with a sprig of mint.
