Loaded Chocolate Chip Cookies with Walnuts Recipe

This cookie recipe’s original name is Lori Taylor’s Chocolate Chippers and can be found in one of my all-time favorite cookbooks: Chef Paul Prudhomme’s Louisiana Kitchen (1984). Chef Prudhomme describes these cookies as “the most deliciously expensive cookie in the world.”

Prep:  15 minutes | Cook:  15 minutes | Yield:  4 dozen cookies

Chocolate chip cookie, coconut, granola, walnut


  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1 large egg
  • 2 tablespoons vanilla
  • 3/4 cup dates, chopped
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup grated coconut
  • 1/2 cup granola
  • 3/4 cup walnuts, chopped
  • 1 3/4 cup semisweet chocolate chips


  1. Preheat oven to 350 degrees F.
  2. In a large bowl, beat butter and sugar together until smooth.  Beat in egg and vanilla.  Stir in dates and allow batter to sit for 5 minutes to soften dates.  Beat for 3 minutes until batter is light and creamy.
  3. In a separate bowl, combine flour, baking soda, salt, and baking powder.  Stir into batter until fully combined.  Stir in coconut, granola, walnuts, and chocolate chips.
  4. Drop batter by tablespoons onto lightly greased baking sheets about 2 inches apart.  Bake 10-15 minutes.
