Glazed Lemon Cookies Recipe



Lemony goodness!

Prep: 15 minutes | Chill: 2-3 hours | Cook: 10 minutes | Glaze set:  2 hours | Yield:  2 dozen

Glazed Lemon Cookies

Ingredients

Cookies

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons almond extract
  • 2 tablespoons lemon juice (juice from one lemon)
  • grated lemon zest from one lemon
  • 2 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt

Glaze

  • 1 1/2 cups powdered sugar
  • 2 tablespoons lemon juice (juice from one lemon)
  • grated lemon zest from one lemon
  • 1 /4 teaspoon almond extract
  • a few drops of yellow food coloring

Instructions

  1. In a mixing bowl, beat butter and sugar until light and fluffy.  Beat in eggs, almond extract, lemon juice, and lemon zest.
  2. In a medium bowl, combine the flour, baking powder and salt.
  3. Gradually beat in the flour mixture to the wet ingredients, scraping sides of bowl.  Divide dough into 2 balls.  Flatten each ball into about a 6-inch diameter disk.  Wrap each disk in plastic wrap and refrigerate for 2 to 3 hours or overnight.
  4. Remove one disk from refrigerator.  On a lightly floured surface, roll disk out to 1/4-inch thickness.  Cut out cookies with cookie cutters or a round biscuit cutter and place 1 inch apart on parchment lined baking sheets.    Knead scraps together until smooth, roll into ball, wrap in plastic wrap and return to refrigerator.
  5. Repeat steps in #3 with second disk.   Roll scrap balls out and cut remaining cookies.  Place baking sheets with cookies in refrigerator for 15 minutes.
  6. While cookies are chilling, preheat oven to 450 degrees F.
  7. Bake cookies for 6 to 10 minutes or until edges are lightly browned.  Allow cookies to cool completely on parchment lined baking sheets before glazing.
  8. Glaze:  Combine the powdered sugar, lemon juice,  lemon zest, almond extract, and a few drops of yellow food coloring in medium bowl and stir until smooth.  Spoon about 1/2 teaspoon of glaze over each cookie and using back of spoon, gently spread over cookie.  Allow glaze to harden for about 2 hours.
