Cream Scones

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • Pinch of salt
  • 6 tablespoons of frozen butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 1 teaspoon lemon zest
  • Sugar for garnish

  1. Preheat the oven to 400°F.
  2. Sift the flour, baking powder, sugar and salt into a bowl.  Cut the butter into small pieces and work into the flour mixture with a pastry blender or 2 knives until you get coarse crumbs.
  3. Whisk the eggs, vanilla, heavy cream, sour cream and lemon zest in a small bowl.  Add to the flour mixture until just combined.
  4. Roll out the dough on a floured surface until 1/2 inch thick.
  5. With a sharp knife, cut into petal shapes to make the flower decoration or use a round cookie cutter.   Place on a greased cookie sheet.   Lightly sprinkle with sugar.
  6. Bake at 400°F for about 10 minutes or until golden brown.
