Chin Chin (Nigerian Cookies) Recipe

Chin Chin is a Nigerian cookie that is fried. I sprinkle mine with powdered sugar – you can also shake warm cookies in a bag of powdered sugar or sugar and cinnamon mix.


Prep:  30 minutes | Fry:  5 minutes | Servings:  10-15


  • 5 cups all-purpose flour – sifted
  • 1/2 tablespoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 1 1/2 cup sugar
  • 9 tablespoons butter (quarter each tablespoon)
  • 3 large eggs
  • 1/4 cup water
  • Canola oil for frying
  • Powdered sugar to sprinkle on cookies after frying


  1. Mix dry ingredients in a large bowl.
  2. Add butter to the dry ingredients and mix with a pastry blender until mixture looks crumbly.
  3. In a separate bowl, whisk the eggs with the water.  Add to the flour mixture and knead until a smooth ball is formed.  Flour hands if needed to prevent sticking.
  4. Cover and refrigerate dough for 30 minutes.
  5. Heat oil in a medium skillet.
  6. Flour rolling surface and roller.  Take of quarter of dough ball and flatten with hands.  Roll dough until 1/4 inch thick.  Using a pizza cutter, cut straight lines 1/2 inch apart horizontally, then diagonal lines 1 1/2 inch apart.
  7. Fry cookies until golden brown.
  8. Sprinkle with powdered sugar.
