Caramel Cake Recipe

In novel The Help by Katherine Stockett, caramel cake is the dessert Minny prepares for those she loves. I baked my caramel cake as cupcakes and served in old fashioned glasses for my book club party.

Preparation: 30 minutes | Cook:  10-12 minutes | Serves:  8

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup butter, room temperature
  • 1 1/2 cups sugar
  • 3 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • Whipped cream and brown sugar

Sauce between the layers:

  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup milk
  • 1 teaspoon vanilla


  • 1 can (14 oz) of condensed milk
  • 1 1/2 cups brown sugar
  • 1 stick butter
  • 1 teaspoon vanilla


  1. Preheat the oven to 375 degrees.  Place cupcake liners in two 12 cup cupcake tins.
  2. Combine flour, baking powder and salt in a medium bowl.
  3. In a large bowl, cream the butter and sugar with an electric hand mixer until fluffy, about 8 minutes.
  4. Add the eggs one at a time, beating thoroughly after each addition.
  5. Alternately add the flour and milk, starting and ending with flour.  Mix in the vanilla.
  6. Fill the cupcake liners halfway and bake for 10-12 minutes.
  7. While the cake is cooking, combine the brown sugar, butter and milk  in a saucepan and cook for 3 minutes, stirring constantly.  Remove from heat and add the vanilla.
  8. When the cupcakes have cooled, remove the paper liners and put one cupcake in an old fashioned glass or ramekin, poke the top surface with a toothpick numerous times and pour about one teaspoon of the sauce on top so it seeps into the holes.  Repeat with 2 more cupcakes.
  9. To make the icing, combine all the icing ingredients in a saucepan and heat until bubbly and thickened, stirring constantly.   Remove from the heat and let it cool.  When cool pour over the cake.
  10. Top each cake with whipped cream and then sprinkle brown sugar on top.
