Berry Crepes Recipe

The filling for these crepes are sweet so I would characterize these more as a dessert crepe. You can just fill with the berries to make a healthier breakfast crepe.

Prep: 5 minutes | Cook: 10 minutes | Servings: 4

strawberries, blueberries, powdered sugar

  • 2 eggs
  • 1 cup milk
  • 3/4 cup all-purpose flour, sifted
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • Powdered sugar for dusting

  • 8 ounce container of cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup strawberries, blueberries or mixed berries
  • 1 teaspoon lemon zest

  1. Make filling first. In a medium bowl, combine cream cheese and powdered sugar until smooth. Gently fold in the berries and lemon zest. Refrigerate.
  2. In the jar of a blender, combine eggs, milk, sifted flour, salt and butter and blend until smooth. Cover and refrigerate 1 hour.
  3. Heat a medium nonstick skillet or crepe pan over medium heat. and brush with butter. Pour 3-4 tablespoons of batter into skillet, tilting to completely coat the bottom. Cook until golden and then turn and cook until other side is golden. Repeat with remaining batter.
  4. Place the filling along one side of the crepe and roll up. Dust with powdered sugar.
