Berry Crepes Recipe
The filling for these crepes are sweet so I would characterize these more as a dessert crepe. You can just fill with the berries to make a healthier breakfast crepe.
Prep: 5 minutes | Cook: 10 minutes | Servings: 4
Ingredients
- 2 eggs
- 1 cup milk
- 3/4 cup all-purpose flour, sifted
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- Powdered sugar for dusting
Filling
- 8 ounce container of cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup strawberries, blueberries or mixed berries
- 1 teaspoon lemon zest
Instructions
- Make filling first. In a medium bowl, combine cream cheese and powdered sugar until smooth. Gently fold in the berries and lemon zest. Refrigerate.
- In the jar of a blender, combine eggs, milk, sifted flour, salt and butter and blend until smooth. Cover and refrigerate 1 hour.
- Heat a medium nonstick skillet or crepe pan over medium heat. and brush with butter. Pour 3-4 tablespoons of batter into skillet, tilting to completely coat the bottom. Cook until golden and then turn and cook until other side is golden. Repeat with remaining batter.
- Place the filling along one side of the crepe and roll up. Dust with powdered sugar.
