Gazpacho Sope Recipe

Gazpacho is a fabulous cold tomato soup loaded with fresh vegetables and herbs. I wish all healthy foods tasted this great!

Prep: 15 minutes | Chill: 8 hours | Serves: 8


  • 5-6  cups of tomatoes, peeled and chopped
  • 1 cucumber
  • 1 sweet red bell pepper
  • 1/2 red onion
  • 2 stalks celery
  • 2 – 3 tablespoons of fresh parsley, chopped
  • 2 – 3 tablespoons of fresh chives, chopped
  • 2 cloves garlic, minced
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • juice of 1 large lemon
  • 2 cups tomato juice
  • salt and pepper, to taste
  • sprigs of mint


  1. Peel and chop enough fresh, ripe tomatoes to make 5-6 cups.  Add to large, non-metal storage container or bowl.  Peel and chop cucumber and add to tomatoes.
  2. In food processor* (or by hand), chop sweet red bell pepper, onion, and celery.  Add to tomatoes mixture.  Stir in chopped parsley, chives and minced garlic.
  3. Add red wine vinegar and olive oil.  Squeeze* in the lemon juice and add tomato juice.  Add in salt and pepper to taste.  Cover non-metal container or bowl and refrigerate at least 8 hours to allow flavors to meld.  Serve with fresh sprigs of mint.
