Creamy Tomato Basil Soup Recipe



This Tomato Basil Soup is an easy soup recipe that can be made the day before your party. Serve with oyster crackers or sour dough bread.

Prep:  10 minutes | Cook: 45 minutes | Servings: 8

Tomatoes, Basil Recipes

Ingredients

  • 1  28 ounce can of whole tomatoes
  • 1  14 1/2 ounce can whole tomatoes
  • 4 cups tomato juice
  • 15 chopped fresh basil leaves
  • 6 tablespoons unsalted butter
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Combine both cans of whole tomatoes and tomato juice in a large cooking pot.  Bring to a boil then simmer for 30 minutes.
  2. Place tomato mixture in a blender or food processor.  Add chopped basil leaves and puree.  Return mixture to the pot and place over medium heat.
  3. Stir while adding cream, butter and salt and pepper to taste and stir until butter is melted.  Do not let the mixture boil.
  4. Ladle into soup bowls and garnish with heavy cream and fresh basil.
