Wilted Spinach Salad Recipe

Spinach never tasted so good.

Prep time: 15 minutes | Cook time: 10 minutes | Serves: 6-8

Wisconsin Spinach Salad


  • 1 pound of fresh spinach, washed
  • 3 hard-boiled eggs, sliced
  • 6 slices bacon
  • 4 green onion, chopped


  • 3/4 cup bacon grease (or bacon grease/vegetable oil combination to equal 3/4 cup)
  • 1/3 cup vinegar
  • 1/3 cup sugar
  • 1/4 cup catsup
  • 1 teaspoon salt


  1. In large frying skillet, fry bacon until crisp.  Remove bacon to drain.  Reserve bacon grease.  Mix together in large bowl, spinach, hard-boil eggs and onion.  Crumble bacon over salad and set aside.
  2. Pour reserved bacon grease in measuring cup and add vegetable oil if needed to make 3/4 cup.  Add back to grease to skillet with vinegar, sugar, catsup and salt.  Heat to simmer then pour over salad.  Serve immediately.
