Trail Mix Quinoa Salad Recipe

Quinoa is rich in protein and fiber and can be substituted for nearly any grain in cooking. This quinoa salad is loaded with raisins, dried cranberries, nuts and seeds. A treat for any outdoor gathering.

Adapted from Quinoa Salad with Dried Fruit and Nuts

Prep Time: 20 minutes Cook Time: 20 minutes Ready in: 2 hours Servings: 10

Quinoa Salad


  • 1 1/2 cups quinoa
  • 1/4 teaspoon salt
  • 3 1/2 cups water
  • 1 bunch green onions, chopped
  • 3/4 cup chopped celery
  • 1/4 cup raisins
  • 1/4 cup dried cranberries
  • 1 pinch cayenne pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon distilled white vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons sunflower oil
  • 1/3 cup chopped fresh cilantro
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup sunflower seeds


  1. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes. Once done, scrape into a large bowl, and allow to cool for 20 minutes.
  2. While quinoa is cooling, prepare the dressing by mixing together vegetable oil, vinegar, lemon juice, and sunflower oil. Set aside.
  3. Stir the green onions, celery, raisins, dried cranberries, and cayenne pepper into the cooled quinoa. Pour dressing over top and combine ingredients. Allow quinoa salad to stand at room temperature for 1 hour to allow the flavors to blend.
  4. Just before serving, stir in the cilantro, nuts and sunflower seeds.
