Leafy Greens, Mandarin Oranges and Broccoli Salad Recipe
Superfood lists show up in about every magazine out there and broccoli always makes the list. It contains a phytochemical called sulforaphane that has specific anti-cancer properties. This flavorful salad is a great way to enjoy this beneficial super veggie.
Prep: 15 minutes | Serve: 6
Ingredients
- 5 cups torn red leaf lettuce
- 2 cups torn washed spinach
- 2 cups broccoli florets
- 1 can (10 1/2 ounces) mandarin oranges, drained
- 1 cup chow mien noodles
- 1/4 cup orange juice
- 1 1/2 tablespoons red wine vinegar
- 1 1/2 teaspoons poppy seed
- 1 1/2 teaspoons olive oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/8 teaspoon black pepper
Instructions
- In a large salad bowl, combine lettuce, spinach, broccoli florets, mandarin oranges and chow mien noodles.
- In a small bowl, whisk together orange juice, red wine vinegar, poppy seeds, olive oil, honey, mustard and pepper.
- Toss dressing with salad and serve.
