Leafy Greens, Mandarin Oranges and Broccoli Salad Recipe



Superfood lists show up in about every magazine out there and broccoli always makes the list. It contains a phytochemical called sulforaphane that has specific anti-cancer properties. This flavorful salad is a great way to enjoy this beneficial super veggie.

Prep: 15 minutes | Serve: 6

Leafy Green, Mandarin Oranges and Broccoli Salad

Ingredients

  • 5 cups torn red leaf lettuce
  • 2 cups torn washed spinach
  • 2 cups broccoli florets
  • 1 can (10 1/2 ounces) mandarin oranges, drained
  • 1 cup chow mien noodles
  • 1/4 cup orange juice
  • 1 1/2 tablespoons red wine vinegar
  • 1 1/2 teaspoons poppy seed
  • 1 1/2 teaspoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon black pepper

Instructions

  1. In a large salad bowl, combine lettuce, spinach, broccoli florets, mandarin oranges and chow mien noodles.
  2. In a small bowl, whisk together orange juice, red wine vinegar, poppy seeds, olive oil, honey, mustard and pepper.
  3. Toss dressing with salad and serve.
