Greek Country Salad (Horiatiki Salata) Recipe



Fresh tomato, cucumber, red onion, green and red bell pepper, plus the required feta cheese, olives, and olive oil tossed together for a Greek country salad.

Prep time: 15 minutes | Chill time: 1 hour

Country Greek Salad

Ingredients

  • 3 large tomatoes, chopped
  • 1 cucumber, peeled and sliced
  • 1/3 red bell pepper, cut in long thin strips
  • 1/3 green bell pepper, cut in long thin strips
  • 1/4 – 1/2 cup extra virgin olive oil, as desired
  • 1 teaspoon of sea salt
  • 1 teaspoon coarse ground pepper
  • 1/4 teaspoon oregano
  • 1 cup crumbled feta cheese, mild or strong as per personal preference
  • 1 cup pitted, halved olives

Instructions

  1. Place all the vegetables into a large salad bowl as you cut them up, make sure the juices of the tomatoes are added to the bowl as well.  Stir in olive oil and seasonings, then the feta cheese and olives.
  2. Allow salad to sit for about an hour before serving.  Delicious served with a crusty bread like horiatki psomi.
