Egg Salad on Pumpernickel Bread Recipe

Egg salad on pumpernickel is one of my favorite snacks. Use low fat mayonnaise to make it a little healthier.

Prep:  10 minutes  Cook:  10 minutes

Egg Salad on Pumpernickel


  • 8 eggs, hard boiled
  • 2 teaspoons Dijon mustard
  • ½ cup mayonnaise
  • ½ teaspoon onion powder
  • 1 teaspoon dill weed
  • ¼ teaspoon paprika
  • Salt and pepper to taste
  • Olives for garnish (optional)


  1. Chop the hard boiled eggs.
  2. Stir in the Dijon and mayo.
  3. Add the onion powder, dill weed, paprika, salt and pepper and combine well.
  4. Serve on your favorite bread.  My favorite for this egg salad is pumpernickel.  Garnish with an olive on a toothpick.

Optional: My mom adds fresh roasted oregano to her egg salad and it adds a flavorful kick.
