Artfully Arranged Fresh Greens Salad Recipe

This fabulous fresh salad has a very nice presentation and is deliciously topped with a sunflower basil dressing.

Prep: 15 minutes | Chill (dressing): 4 hours or overnight | Serves: 8

Baby Greens Salad


Sunflower Basil Dressing

  • 1/2 cup sunflower oil or olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh basil leaves, chopped
  • 1/8 teaspoon white sugar
  • 1/2 teaspoon minced garlic
  • 1 tablespoon mayonnaise


  • 4 cups of baby field greens, or fresh herb mix salad
  • 10-12 grape tomatoes
  • 1/2 medium red onion, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1 teaspoon of sea salt
  • 1 cup Feta cheese crumbles
  • 1/2 teaspoon coarse ground pepper
  • 1/3 cup raw sunflower seeds


In a bowl, mix the oil, vinegar, basil, sugar, garlic, and mayonnaise. Cover, and refrigerate for 4 at least four hours to overnight. Strain dressing in a fine mesh strainer to remove basil and minced garlic. Ready to serve.

Add greens to large bowl. Arrange tomatoes, onion, and cucumbers over top of greens. Sprinkle salt over top. Distribute Feta crumbles over salad. Sprinkle pepper and sunflower seeds over top. Serve with dressing.
