Spicy Basil Chicken and Squash Pasta Recipe
Straight from the garden into the skillet, add some chicken and voila!
- In large skillet, heat olive oil and butter until butter is melted. Season chicken with salt and pepper and add chicken and garlic to skillet. Stir and cook until chicken almost white, about 5-7 minutes.
- Add squash and jalapeno and cook for 2 minutes. Add tomatos, a pinch of sugar (about 1/8 teaspoon), heavy cream, basil, crushed red pepper and vodka. Continue cooking uncovered until squash is softened.
- Stir in cooked spaghetti, sprinkle top with grated Parmesan cheese, cover, remove from heat and allow to rest for about 5 minutes. Stir before serving and top with additional Parmesan cheese and crushed red pepper, if desired.
