Slow Cooked Mutton Stew Recipe



Mutton is from an older sheep and tends to be tougher than lamb. I substituted lamb for this recipe and the results were delicious.

Prep:  20 minutes | Cook time:  8 hours | Serves:  8

Meat Stew, potatoes

 

Ingredients

  • 1 1/2 pounds boneless lamb stew meat
  • 1 pound bone-in lamb stew meat
  • 1/2 cup flour
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 potatoes, peeled and cubed
  • 3 parsnips, peeled and sliced
  • 3 onions, quartered
  • 3 cups beef stock
  • 1/4 cup whiskey
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 2 bay leaves
  • Fresh parsley for garnish

Instructions

  1. Combine the lamb stew meat, flour, salt and pepper in a large mixing bowl and toss to coat.
  2. Heat the olive oil in a large skillet and brown the lamb meat.
  3. Place the lamb meat and the rest of the ingredients, except for the fresh parsley, in a crock pot.  Stir to mix.
  4. Cook on low for 8 hours.
  5. Garnish with fresh parsley before serving.
