Sandwich Appetizer Tray Recipe



A delicious sandwich tray is always great for any gathering. Make a variety of sandwiches to suit everyone’s taste.

Prep:  20 minutes | Serves:  8-10

Ingredients

Tuna Salad Sandwiches

  • 1 can (12 ounce) tuna in spring water
  • 1/4 cup real mayonnaise
  • 4 tablespoons dill relish
  • 3 tablespoons purple onion, finely chopped
  • Salt and pepper to taste
  • 8 slices wheat bread

Turkey Pastrami Sandwiches

  • 1/2 pound thinly sliced turkey pastrami
  • 4 slices thinly sliced Swiss cheese
  • spicy brown mustard to taste, or can use prepared mustard
  • 8 slices dark rye bread

Sides

  • Salt and vinegar potato chips
  • Ridged potato chips
  • Large dill pickles

Instructions

  1. Tuna Salad Sandwiches:  Mix tuna, mayonnaise, dill relish, and chopped purple onion together thoroughly.  Season with salt and pepper.  Spread tuna onto slice of bread and top with another slice.  Cut off the crust.   Cut sandwich in half and then cut each half in half so you end up with 4 equal squares.  Repeat with remaining slices.
  2. Pastrami Sandwiches:   Lay pastrami and cheese on rye bread slice.  Spread mustard on another slice and top off sandwich.  Cut off the crust.  Cut sandwich in half and then cut each half in half so you end up with 4 equal squares.  Repeat with remaining slices.
  3. Stack the sandwiches on a serving platter tray and serve with chips and pickles.
