Mango Pudding Recipe


If there is any mango pudding left after your party, you can scoop it into freezer pop molds and make a mango pop for the kids to enjoy for a snack.

Inspired by Hotel on the Corner of Bitter and Sweet

Prep Time:  15 minutes     Chill Time:  3-4 hours     Servings:  8

Mango Pudding

Ingredients

  • 1 cup hot water
  • 2 envelopes unflavored gelatin
  • 1/2 cup sugar
  • 3 cups can of mango puree
  • 1 cup whipping cream
  • 1 cup ice cold water
  • Mint sprigs to garnish

Instructions

  1. Pour hot water in a medium mixing bowl.  Stir while adding gelatin and sugar.  Continue stirring until gelatin and sugar are dissolved.
  2. In a large mixing bowl, add mango puree, whipping cream and ice cold water.  Mix with a handheld mixer at low speed for 1 minute.
  3. Pour gelatin mixture into mango mixture and mix on low for 1 minute.
  4. Pour into individual dessert bowls, if desired.  Cover and refrigerate for 3 hours for individual servings and 4 hours if leaving in mixing bowl.
  5. Garnish with mint.
