Mango Pudding Recipe
If there is any mango pudding left after your party, you can scoop it into freezer pop molds and make a mango pop for the kids to enjoy for a snack.
Inspired by Hotel on the Corner of Bitter and Sweet
Prep Time: 15 minutes Chill Time: 3-4 hours Servings: 8

Ingredients
- 1 cup hot water
- 2 envelopes unflavored gelatin
- 1/2 cup sugar
- 3 cups can of mango puree
- 1 cup whipping cream
- 1 cup ice cold water
- Mint sprigs to garnish
Instructions
- Pour hot water in a medium mixing bowl
. Stir while adding gelatin and sugar. Continue stirring until gelatin and sugar are dissolved.
- In a large mixing bowl
, add mango puree, whipping cream and ice cold water. Mix with a handheld mixer at low speed for 1 minute.
- Pour gelatin mixture into mango mixture and mix on low for 1 minute.
- Pour into individual dessert bowls
, if desired. Cover and refrigerate for 3 hours for individual servings and 4 hours if leaving in mixing bowl.
- Garnish with mint.
