Glazed Lemon Cookies Recipe
Lemony goodness!

Prep time: 15 minutes Chill time: 2-3 hours Cook time: 10 minutes Glaze hardening time: 2 hours
Yield: 2 dozen

Ingredients
Cookies
- 1 cup butter
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons almond extract
- 2 tablespoons lemon juice (juice from one lemon)
- grated lemon zest from one lemon
- 2 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
Glaze
- 1 1/2 cups powdered sugar
- 2 tablespoons lemon juice (juice from one lemon)
- grated lemon zest from one lemon
- 1 /4 teaspoon almond extract
- a few drops of yellow food coloring
Instructions
- In a mixing bowl, beat butter and sugar until light and fluffy. Beat in eggs, almond extract, lemon juice, and lemon zest.
- In a medium bowl, combine the flour, baking powder and salt.
- Gradually beat in the flour mixture to the wet ingredients, scraping sides of bowl. Divide dough into 2 balls. Flatten each ball into about a 6-inch diameter disk. Wrap each disk in plastic wrap and refrigerate for 2 to 3 hours or overnight.
- Remove one disk from refrigerator. On a lightly floured surface, roll disk out to 1/4-inch thickness. Cut out cookies with cookie cutters or a round biscuit cutter and place 1 inch apart on parchment lined baking sheets. Knead scraps together until smooth, roll into ball, wrap in plastic wrap and return to refrigerator.
- Repeat steps in #3 with second disk. Roll scrap balls out and cut remaining cookies. Place baking sheets with cookies in refrigerator for 15 minutes.
- While cookies are chilling, preheat oven to 450 degrees F.
- Bake cookies for 6 to 10 minutes or until edges are lightly browned. Allow cookies to cool completely on parchment lined baking sheets before glazing.
- Glaze: Combine the powdered sugar, lemon juice, lemon zest, almond extract, and a few drops of yellow food coloring in medium bowl and stir until smooth. Spoon about 1/2 teaspoon of glaze over each cookie and using back of spoon, gently spread over cookie. Allow glaze to harden for about 2 hours.
