Coconut Laddoo (Laddu) Recipe


If you love coconut, this Indian dessert recipe is the one for you.     This easy recipe, adapted from Indobase.com, is made with just coconut, milk and sugar.  Indian desserts tend to be too sweet for me, so I decreased the sugar by 1/2 cup.  The first time I made it I had a hard time forming balls so I increased the coconut to 2 1/2 cups which, along with heavily greasing my hands with butter, made this recipe a cinch.

Prep:  15 minutes     Cook time: 10 minutes     Makes:  About 20

Coconut Laddus Recipes

 

Ingredients

  • 2 1/2 cups unsweetened shredded coconut + 1 cup for coating
  • 1 cup milk
  • 1 1/2 cups sugar
  • Butter for coating your hands

Instructions

  1. Place the milk in a saucepan.  When it starts to boil, add the 2 1/2 cups coconut and mix well.  When the milk gets absorbed into the coconut, add the sugar.   Over medium heat, stir continuously until the mixture is thickened and begins to pull away from the sides of the pan, about 5-8 minutes.   Remove from heat and let cool.
  2. Place the remaining coconut on a plate.  Grease your hands with butter and press the mixture in your hands to make a ball.  Roll the balls in the coconut.
