Caramel Cake Recipe


This southern dessert is the cake Minny serves those she loves.  I adapted it for the book club party and put it in a double old fashioned glass.

Prep time:  30 minutes     Cook time:  10-12 minutes     Servings:  8

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup butter, room temperature
  • 1 1/2 cups sugar
  • 3 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • Whipped cream and brown sugar

Sauce between the layers:

  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup milk
  • 1 teaspoon vanilla

Icing:

  • 1 can (14 oz) of condensed milk
  • 1 1/2 cups brown sugar
  • 1 stick butter
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 375 degrees.  Place cupcake liners in two 12 cup muffin tins.
  2. Combine flour, baking powder and salt in a medium bowl.
  3. In a large bowl, cream the butter and sugar with an electric hand mixer until fluffy, about 8 minutes.
  4. Add the eggs one at a time, beating thoroughly after each addition.
  5. Alternately add the flour and milk, starting and ending with flour.  Mix in the vanilla.
  6. Fill the cupcake liners halfway and bake for 10-12 minutes.
  7. While the cake is cooking, combine the brown sugar, butter and milk  in a saucepan and cook for 3 minutes, stirring constantly.  Remove from heat and add the vanilla.
  8. When the cake has cooled, put one layer in the cup, poke the top surface with a toothpick numerous times and pour about one teaspoon of the sauce on top so it seeps into the holes.  Repeat with 2 more layers.
  9. To make the icing, combine all the icing ingredients in a saucepan and heat until bubbly and thickened, stirring constantly.   Remove from the heat and let it cool.  When cool pour over the cake.
  10. Top each cake with whipped cream and then sprinkle brown sugar on top.

***Another option for the cake is to bake it in a clean and dry soup can or baking tubes, depending on the size of the container you are going to put the finished cake in.  Grease it with cooking spray and follow the directions above. Fill it halfway with the cake mix and cook for 12- 15 minutes, until a toothpick comes out clean.  After it cools cut it into slices and layer as above.  This worked better for the old-fashioned glasses since the cake made in the soup can was a little bigger.
