Making a cake with barley was new to me and it turned out fabulous! It did taste a little more grainy than with all-purpose flour, but I actually liked the taste more. I could not find barley flour at my store, so I bought pearl barley and used my blender to grind it, which could explain the grainier taste.

Salted Bittersweet Chocolate Chip Cookies Recipe

I had just finished eating the last cookie from an incredible recipe I had recently found online at about the time I began work on my post for The Sandcastle Girls by Chris Bohjalian. This novel is partly set in Syria during World War I. I wondered if I could play with this recipe a bit and give it an Armenian/Middle Eastern exotic twist. The recipe already had pistachios and sea salt, so I added some orange oil and substituted the dark chocolate chips for bittersweet chocolate chips. The result: WOW!

Creamy Kanafeh Dessert Recipe

Kanafeh is a creamy, rich Middle Eastern dessert made with shredded phyllo and two cheeses. A sweet syrup of orange blossom water, lemon juice and a pinch of saffron is poured over the warm kanafeh, followed by a sprinkling of pistachios. Take my word, this is one special dessert!

Burmese Semolina Cake Recipe

Semolina Cake is a dense coconut-flavored snack cake made with semolina flour — the same flour used to make pasta. I decreased the sugar a bit from the original recipe and since I love cardamom, I increased that spice a bit as well. Semolina Cake is delicious served with hot tea or coffee.

Stained Glass Cake Recipe

The Stained Glass Cake Recipe from Jell-O has been around for ages. It’s easy to prepare and kids love it. I got a little impatient when preparing this recipe and added the Jell-O before it was fully set, so the cubes did not hold their shape. It still turned out pretty, but be sure to give the Jell-O the minimum 4 hours it needs in the refrigerator.
