Peasant Potato Soup Recipe

In A Tale of Two Cities, Dickens describes the peasant’s lives: “hunger was shred into atomies in every farthing porringer of husky chips of potato, fried with some reluctant drops of oil” I am not really sure what he is saying either, but it sounds something like potato soup made with potatoes fried in a few drops of oil, so that is how I made my recipe. Except I increased the oil…more than just a little bit.

German Butterball Soup Recipe

German Butterball Soup is a recipe that Russian German immigrants introduced to the Great Plains. The butterballs are made with stale bread and butter and are seasoned with allspice. They are usually simmered in a clear chicken stock, but for this soup recipe, I added chicken and mixed vegetables. For a more traditional butterball soup, just omit the chicken and vegetables.

French Matzo Soup Recipe

The matzo balls are best in a strained homemade chicken stock, but, if time is tight, canned chicken broth works well too. Although, it’s often recommended to cook matzo balls in boiling salted water and transfer to the chicken stock to keep the soup clear, I love the flavor of the matzo ball cooked in the broth.

Spicy Chickpea Soup (Chana Dal) Recipe

Chana dal is a bean used in Pakistan and India that is most similar to the chickpea but smaller in size.    Unable to find chana dal at my local supermarket, I used chickpeas in this recipe.  The combination of the spices and crushed tomatoes makes for a spicy flavorful dish.
