Luby’s Cloverleaf Rolls Recipe


These cloverleaf dinner rolls come from Luby’s Cafeteria 50th Anniversary Recipe Collection.   The only modification I made to this recipe is adding chopped fresh rosemary (or any other herb of your choice) on top before cooking.

Prep Time:  20 minutes     Rise Time:  2 hours     Cook Time:  15 – 20 minutes     Servings:  makes 12 dinner rolls

Luby's Cloverleaf Rolls

Ingredients

  • 1 ounce active dry yeast
  • 1 1/3 cups warm water (110°F)
  • 3 extra-large eggs
  • 1/4 cup plus 1 1/2 teaspoons butter or margarine, melted
  • 1/2 cup granulated sugar
  • 1/3 cup nonfat dry milk powder
  • 1/2 teaspoon salt
  • 5 cups all-purpose flour
  • vegetable oil
  • 2 tablespoons fresh chopped rosemary

Instructions

  1. In large mixing bowl, dissolve yeast in warm water.  Add eggs and butter.  Using dough hook of electric mixer, beat on medium speed until well blended.  Add sugar, dry milk, and salt.  Mix well.   Add flour, 1 cup at a time, mixing until dough begins to pull away from side of bowl.
  2. Lightly grease top of dough with oil.  Cover loosely and let rise in warm place 1 hour or until doubled in size.
  3. Lightly grease 12 medium muffin cups.  Punch dough down.  Divide dough evenly into 12 pieces.   Divide each piece into 3 balls and place in muffin cup.  Let rise in warm place 1 hour.  Sprinkle fresh chopped rosemary on top of rolls.
  4. Heat oven to 350 degrees F.  Bake 15 to 20 minutes or until golden brown.

Tips:

  • To rise, yeast dough should be covered with a clean cloth or waxed paper and placed in a warm, not hot, place, 80 – 85 degrees F.
  • To test whether dough has doubled in size, press fingertip 1/2 inch into dough.  If dough has doubled, indentation will remain.
  • To punch down dough, press fist into center of dough.  Fold dough over and form a ball.  This releases large air bubbles to produce breads and rolls with  finer texture.
