Hungarian Spaetzle (Dumplings) Recipe
Traditionally to make spaetzle, you place the dough on a wooden board and hold it over the boiling water as you cut strips off. It is supposedly a very messy job. I decided to make the dough a little thicker to make the job easier and cleaner. The spaetzle came out a little chewier than I like. Next time I am going to use a spaetzle maker, which I have read has a delicious recipe that comes with it.

Prep: 30 minutes Cook time: About 2 minutes Serves: 6

Ingredients
- 3 cups sifted flour
- 3 large eggs, beaten
- 1 tablespoon olive oil
- 5 tablespoons milk
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/4 teaspoon nutmeg
Instructions
- Combine all the ingredients in a large bowl. I used my hands to thoroughly mix everything together and form a dough ball.
- Bring a large pot of water with 1 tablespoon of salt to boil.
- Separate the dough into 8 portions and roll out about the thickness of pinky finger. Place the dough on a wooden board and cut off about 1/2 inch pieces.
- Add the dough to the boiling water in small batches. When the spaetzle floats to the top you are done. Use a slotted spoon to skim them off the top of the water and drain. Place them in a bowl with a little melted butter to keep them from sticking.
