Sweet Corn So Easy


Sweet Corn Straight from the Field

I’m always awaiting this time of year with mouth-watering anticipation for fresh from the farm produce.  The rains were plentiful this spring and the little vegetable and fruit stands opening up along the roadside are laying out their bountiful harvests of green beans, peaches, plums, watermelon, cantaloupes, cucumbers, squash and sweet corn.

I used to cook my sweet corn in a big pot of salted boiling water, until (revelation!), a local produce broker gave my husband a tip which I’ll happily share …

Sweet Corn

Did you know that sweet corn can be cooked in the microwave, husk and all?  Uh huh!  Just cut the ends off, do not remove the husks, and pop two ears  in the microwave for 2 1/2 minutes.  The corn will be very hot when done cooking so carefully remove the husks and corn silk, which slides right off.   The corn is so sweet and crunchy and not the least bit waterlogged like it can get in that pot of boiling water.  Season it as you please.  I like my sweet corn with lots of butter and just a bit of salt.  Enjoy!
