English Breakfast and Earl Grey Tea Custard Recipe



This creamy tea custard recipe is ideal for a tea party on a hot day.

Preparation: 10 minutes | Cook: 40 minutes | Serves:  12

Earl Grey, English Breakfast Creamy dessert

Ingredients

  • 6 cups half and half
  • 9 English Breakfast tea bags
  • 3 Earl Grey tea bags
  • 15 egg yolks
  • 3/4 cup sugar
  • 1/3 cup honey
  • 3 teaspoons lemon juice
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 300 degrees F.
  2. In a medium saucepan, bring the half and half and tea bags to a boil, stirring occasionally.  Remove from the heat and let sit for 10 minutes to cool.  When cooled squeeze excess liquid from the tea bags into the pan.
  3. In a medium bowl, whisk the egg yolks, sugar, honey, lemon zest and salt.  While continuing to whisk, pour in the tea mixture.
  4. Using two roasting pans, place 6 ramekins or ovenproof tea cups in each.  Add hot water to the roasting pan halfway up the sides of the cups.  Add the tea mixture until 2/3 full.  Skim off bubbles.
  5. Bake for about 35 minutes or until set.   Let cool, then place plastic wrap over the tops of the cups and refrigerate for 3 hours or overnight.
