Spinach Hummus Recipe

Spinach Hummus makes a healthy dip and is also a great spread for your favorite wrap.

Prep Time:  5 minutes | Cook Time:  5 minutes | Servings:  8

Spinach Hummus

  • 8 cups torn spinach
  • 2 (15 ounce) cans garbanzo beans, drained, reserving 4 tablespoons of liquid
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/3 cup tahini
  • juice of 1 lime

  1. In a large saucepan, combine torn spinach, garbanzo beans, liquid from beans, garlic, olive oil, and salt.  Cook over medium heat for 5 minutes.   When done cooking, transfer to a food processor.
  2. Add tahini and lime juice.  Process until beans are finely chopped, approximately 30 seconds.  Do not process until dip is creamy, you want some texture to this dip.
  3. Put in serving bowl and serve with chips and crackers.

  1. I just discovered how easy it is to make homemade hummus and will have to give this recipe a try. You definitely need to use the tahini! I have tried other oils and have not found anything that tastes as good.
