Shrimp Toast Recipe
Shrimp toast is a common dim sum appetizer. Triangles of dried bread are topped with a shrimp mixture and fried to a golden brown.
Prep: 10 minutes | Cook: 30 minutes | Servings: 8
Ingredients
- 20 slices of white day old bread
- 3/4 pound raw, peeled deveined shrimp (if using frozen shrimp be sure to thaw completely for 30 minutes in cold water)
- 2 teaspoons sesame oil
- 1/2 tomato, seeded and finely chopped
- 3 green onions, finely chopped
- 1 teaspoon grated ginger
- 1 teaspoon white rice vinegar
- 1 large egg, lightly beaten
- 2 teaspoons flour
- 2 tablespoons sesame seeds
- Canola oil for frying, to fill to a depth of at least 1 inch in frying pan
- Salt to taste
Instructions
- Preheat oven to 225 degrees.
- Trim crust from the bread. Cut each slice into four equal triangles. Place bread on a cookie sheet
. Bake at 225 degrees until completely dry, approximately 30 minutes.
- Place the shrimp and sesame oil into a blender or food processor. Pulse four times. Add the chopped tomato, chopped green onions, grated ginger, white rice vinegar, beaten egg and flour. Beat or process until mixture becomes paste-like.
- Spread 1 heaping tablespoon of shrimp mixture on the top of each toast. Sprinkle with sesame seeds and gently press seeds into mixture.
- Heat oil to 350 degrees in a heavy frying pan. To test oil, place a corner of one prepared toast in oil and it should begin to bubble.
- Prepare a plate with paper towels to place shrimp toast on after frying.
- Add shrimp toast to oil, shrimp side down. The bread should float to the top and begin to bubble immediately. Cook for 1 1/2 minutes or until mixture is medium brown. Carefully turn over, then cook for about 25 seconds until bread is browned.
- Remove shrimp toast from pan with a slotted spatula
and place on paper towels to drain. Sprinkle with salt while still hot.
- Let cool and serve.
