Fall Harvest Snack Mix Recipe



This is the perfect snack mix to chase away the munchies. It’s salty, sweet, peanut buttery, and chocolately to boot!

Prep Time: 15 minutes | Cook Time: 45 minutes | Yield: 10-12 cups of snack mix

Ingredients

  • 4 cups of mini pretzels (or look for small pumpkin and bat shaped pretzels in the fall)
  • 2 (8-9 ounce) boxes (about 3-4 cups) of mini Ritz Bits Peanut Butter Sandwich Crackers or Nutter Butter Snack-Bites Cookies
  • 2 cups pecan halves, lightly roasted*
  • 1/2 cup butter
  • 1 cup brown sugar, packed
  • 1/2 cup light corn syrup
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 2 cups of plain M&M’s (harvest color)
  • 2 cups of candy corn or candy corn harvest mix

Instructions

  1. Preheat oven to 250° F.
  2. In a large bowl mix together pretzels, cookies and roasted pecan halves.
  3. In a saucepan over medium heat bring butter, brown sugar and corn syrup to boil.  Continue boiling for 5 minutes.  Remove from heat and stir in vanilla and baking soda.  Immediately pour over pretzel mixture and stir with wooden spoon until well coated.
  4. Spray a large baking sheet with sides with cooking oil and pour mixture into pan.  Bake in oven for 45 minutes, stirring every 15 minutes.  Immediately, after removing from oven, dump the mixture on wax paper.  Let mixture cool for about 5 minutes, then break apart the larger pieces stuck together with a wooden spoon.  Allow to cool completely.
  5. After mixture has cooled completely, return to large mixing bowl.  Stir in M&M’s and candy corn.  Store in an airtight container.

*Lightly Roasted Pecans:  Preheat oven to 250° F.  Spray baking sheet with cooking oil.  Place pecan halves on sheet and place in preheated oven for 10 minutes.  Shake pan halfway through roasting.
