Brie Baguette Pizza with Roasted Garlic and Tomatoes Recipe
In the Millenium series, the characters eat a lot of Billy Pan Pizzas. Luckily in another scene of the book, the main character ate brie on a baguette. I decided to combine these two food ideas into a brie pizza on baguette.

Prep: 20 minutes Cook Time: About 50 minutes (if can roast the garlic and tomatoes at the same time) Serves: 8

Ingredients
- 2 whole garlic bulbs
- 4 tablespoons olive oil
- 2 teaspoon fresh rosemary, minced
- 2 teaspoon fresh thyme, minced or 3/4 teaspoon dried
- 1 teaspoon coarse salt
- 2 pints cherry tomatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2 baguettes, sliced lengthwise
- 1 round Brie cheese
- 1/4 cup Parmigiano Reggiano cheese
Instructions
- Preheat oven to 400 °F.
- Remove just the papery outer skin from the garlic and cut the top off each bulb. Place on a sheet of aluminum foil then place in a ramekin (see picture below). Brush each bulb with 2 tablespoons olive oil and sprinkle with rosemary, thyme and 1/2 teaspoon salt. Wrap the bulb in the foil. Roast at 400 °F for 40 minutes, until softened and creamy.
- Place cherry tomatoes on a foil lined baking sheet. Brush with 2 tablespoons olive oil and sprinkle with 1/2 teaspoon salt. Roast at 400 °F until they start to burst, about 25 minutes.
- When the garlic is done, let cool. Remove the garlic from the foil and brush the top of the baguette with the olive oil left in the foil. Place the baguette in the oven for 5-10 minutes to toast.
- Squeeze the roasted garlic out of its individual paper cloves and spread evenly on the pizza. Top with the tomatoes, slices of brie and Parmesan cheese. Place back into the oven for 3-5 minutes until cheese melted.
You can also make these as crostini by cutting the baguette diagonally.
